This is a different kind of Kolkatte. The ingredients are all mixed and pressed in the hand and then put it to steam. A very nice taste when you have it in your mouth.

Beside the food container is a steel like box where she keeps sugar, kolkatte and scraped coconut. Shanti uses brown sugar to her spring hoppers and Putu.

The second tier of her container is where her Idiyappam or Spring Hoppers are kept. When she opened her food containers the spring hoppers looked fresh and pipping hot.

The first layer is where she keeps her Putu. In this picture Shanti has shown the various types of Putu she has done. She has also come up with Nestum Food. Great tasting stuff when eaten with sugar and scraped coconut.

This is Shanti's Mobile Food Court. Inside the large container she keeps warm Putu of various flavor and Spring Hoppers. Often her food is pipping hot.

Her Costumers
Shanti's costumers are from different races. She says that mostly her clients are Indians as they order her delicacies for various occasions. Some of them like to have a light meal in the night and so they go for Putu or Spring Hoppers. For instance if they have a small gathering or maybe even for festivals there will be ample orders and sometimes she finds it hard to cope but the determined lady says she loves her job and with the help of her family she will be able to cope up with whatever orders she gets.

On Her business
Some days she leaves the house as early as possible so as to get her delicacies to the on time. Sometimes orders are made and this means extra work. On such days the whole family including her children lends out their helping hand to their mother and father.

Her Pride
Shanti said most of her delicacies are prepared hygienically so as to attract more customers. When she first started her was with her all the way. She use to pillion ride on the motorbike. Her husband did not allow her to move b y herself taking account for safety. Once her son moved to college she decided to take matters in her hands by moving around on her own.

All About Shanti
Shanti a mother of 3 children is a solo Putu Mayam (Spring Hoppers) vendor. How does her day starts. She smiled and said it is tedious but she is used to it after all this year. She says her days starts pretty early in the morning. Not only has she to tend to her school going children but to house work as well. Two of her children who are going to college is not to bad but she has to get her young boy Darshan off to school. Once house work done she has to prepare the ingredients for her business.
